Homemade Pizza Sauce
A great tasting and healthy sauce great for pizza or any Mediterranean dish. It’s best on pizza, but can also act as a pasta sauce in a pinch. Spices give this sauce an edge that keeps you coming back for more.
Ingredients
- A few splashes of olive oil
- ½ of a Spanish onion - roughly chopped
- ½ of a head of garlic - roughly chopped
- 1 cup of **celery, carrots, or broccoli stems - roughly chopped
- A pinch of crushed chillies
- A pinch of paprika
- A few pinches of oregano
- 1 can of whole tomatoes
- A pinch of thyme
- A pinch of rosemary
- A few more pinches of oregano
- A pinch of sea salt
- A few pinches of freshly ground pepper
Directions
- Heat oil in large saucepan over medium-high heat.
- Add onions and garlic until they are fragrant and translucent.
- Add other veggies, letting them cook until only just browned.
- Add the spices, toasting them until all moisture is absorbed.
- Add the tomatoes and stir everything together and heat until simmering.
- Add thyme and rosemary.
- Cover or use a splatter guard and reduce to low heat.
- Simmer, stirring occasionally until tomatoes have rendered down, and the veggies are soft, about 10 to 20 minutes.
- Take off heat and let cool a couple of minutes.
- Using an immersion blender or a food processor, purée the mixture to desired consistency.
- Add oregano, salt, and pepper.
- Place back onto low heat and simmer until sauce is thick and smooth, for up to 2 hours.
Allow time to cool before using on a pizza. Can be frozen or stored in the fridge for up to a week. Feel free to customize as needed. Spices can be changed as long as oregano is the dominant flavour, and you have garlic, onions, and tomatoes at your base. Goes great with my homemade pizza dough.
