Crusty Flatbread

This recipe comes from World of Warcraft: The Official Cookbook, with some changes I’ve made while experimenting with the base recipe. From the cookbook itself:
Adventuring in Northrend is serious business and requires serious sustenance. Perfect for travel, these crisp little pieces of flatbread have just a hint of herbs and a satisfying crunch.
Ingredients
- 1¾ cups of multigrain flour
- A pinch of rosemary, pumpkin spice, cumin, or some other spice
- 1 teaspoon of baking powder
- A sprinkle of sea salt
- ⅓ a cup of olive oil
- ½ a cup of water
- 1 tablespoon of honey
- A splash of olive oil
- A sprinkle of coarse sea salt
Directions
- Preheat the oven to 450 °F (230 °C).
- Mix flour, spices, baking powder, and salt.
- Add oil and water to the mixture and mix by hand until combined.
- Roll out dough onto parchment paper until flat.
- Mix the honey with the remaining vegetable oil and spread the mixture onto the dough.
- Sprinkle the top of the dough with sea salt.
- Bake for 8 to 10 minutes or until golden brown.
Notes
- I’ve found that using pumpkin spice, cinnamon, or nutmeg can add a dessert-like quality to the bread. Can also add cinnamon sugar on top to increase this effect.
- Adding cumin, black cumin and sesame seeds to the flatbread gives it a Middle Eastern flavour profile, which is great with hummus.
- This recipe yields 2-3 flatbreads depending on the size, so I often half the recipe.
- The honey adds another layer of flavour regardless of what you do with the bread.
- My favorite way to serve this bread is with eggs and avocado slices or as a quick snack.
- Once you get the recipe down, it only takes 20 minutes to get tasty flatbread on your table.
