Almond Flour Cookies

Ingredients
- ½ cup of plant-based butter
- ½ cup of pitted dates, packed tight
- 2 large eggs
- A splash of unsweetened vanilla almond milk
- 2½ cups of almond flour
- ½ teaspoon of xanthan gum
- A pinch of sea salt
- A lot of pumpkin spice
- 1 cup of dairy-free chocolate chips
- A few sprinkles of coarse sea salt
Directions
- Preheat the oven to 350 °F (180 °C).
- Blend the butter, dates, eggs, and almond milk until they form a smooth paste.
- In a large bowl, whisk the flour, xanthan gum, sea salt, and pumpkin spice together.
- Add the date paste and chocolate chips to the dry ingredients, and mix until well combined.
- Form the dough into small balls and press them down onto a cookie sheet, spread evenly apart.
- Bake for 12 minutes, or until golden brown.
