  1. Preheat the oven to 350 °F (180 °C).
  2. Blend the butter, dates, eggs, and almond milk until they form a smooth paste.
  3. In a large bowl, whisk the flour, xanthan gum, sea salt, and pumpkin spice together.
  4. Add the date paste and chocolate chips to the dry ingredients, and mix until well combined.
  5. Form the dough into small balls and press them down onto a cookie sheet, spread evenly apart.
  6. Bake for 12 minutes, or until golden brown.
