Country Inn Pancakes

I believe this recipe originally came from Michael Smith’s website. It looks like the recipe was renamed to Whole Grain Pancakes, but the basic building blocks are still there.
Ingredients
- 2 cups of multigrain flour
- 1 cup of large flake oats
- 2 tablespoons of baking powder
- A pinch of sea salt
- Lots of pumpkin spice
- 4 eggs
- 2 cups of unsweetened vanilla almond milk
- ¼ cup of plant-based butter, plus more for cooking
- 2 tablespoons of honey
Directions
- Melt some butter in a pan on medium-high heat.
- Mix dry ingredients and wet ingredients separately.
- Add dry ingredients to wet ingredients, and stir to combine.
- Lower pan to medium-low and cook small, thick pancakes until golden brown on both sides.
